Hillbilly Coffee Roasters trades from Denham Road in Tyabb, built around Northern Italian style roasting practices and more than 24 years of combined experience roasting coffee in Australia and overseas. Every blend goes through what the roastery describes as painstaking work in its own lab, aiming for consistency batch to batch rather than a set-and-forget approach. The range runs from house blends to limited-edition single origins, such as a Colombian Supremo espresso roast noted for its sweet, chocolate and tree-nut character, alongside teas, chocolate and other cafe essentials. Hillbilly describes its own focus as sustainability, community and genuinely reliable customer service, backing every blend with hands-on support for the venues it supplies, from equipment servicing to staff training on the machines. The business supplies venues across the Mornington Peninsula with equipment, service and beans, and also sells locally printed merchandise. Limited-edition single origins are released in small batches, each one different from the last as the roastery works through different growing regions and roast profiles. The roastery also prints its own branded hoodies and t-shirts locally in Mornington, extending its community focus beyond the coffee itself, and continues to source beans directly from growing regions the team has visited in person.
