Little Rebel Roastery operates from a converted, decades-old factory on Collins Road in Dromana, started in 2012 by husband-and-wife team Peter and Trish Roberts after Peter found the beans he was buying for his Mount Martha cafe weren't hitting the mark. He began roasting himself, learning under Andrew Lew of Melbourne's The Maling Room, and the couple eventually sold their cafe to focus entirely on roasting. The business sources ethically grown beans directly from farms and importers across Brazil, Colombia, Papua New Guinea, Ethiopia, Honduras and El Salvador, roasting on two Roastmax roasters capable of more than 25 kilograms per batch. Signature blends include Black Sheep, built for black coffee, and Smooth Criminal, a flavour-forward Brazil and El Salvador blend, alongside single-origin beans and bespoke blends created for individual cafe clients across the Peninsula. What began as a wholesale operation grew a cafe of its own, functioning as a cellar door for the coffee, where customers can taste rotating house blends and single origins pulled through a customised Victoria Arduino Black Eagle machine. Little Rebel now supplies more than 60 businesses across the Peninsula and beyond, and has picked up multiple medals at the Golden Bean coffee roasting competition. Open weekday mornings into early afternoon, Little Rebel Roastery suits coffee lovers after genuinely considered, ethically sourced beans, whether that's a cup on site or a bag to take home from one of Victoria's more distinctive roasteries.
