16 Hands is the restaurant at Boneo Park, the equestrian centre on Boneo Road, where horses and riders are in view through the dining room windows. Opened in 2026, it is run by the Fabri Collective, led by Chris Fabri, whose two decades on the Mornington Peninsula include Two Buoys, Red Hill Epicurean and The Milbri.
Chef Matt Hunter leads the kitchen after stints at Salix at Willow Creek, T'Gallant Winery and the Continental Hotel. His menu builds on French and Italian foundations with a modern Australian approach, using seasonal produce from local growers. Small plates include kangaroo skewers with blackberry barbecue sauce and saltbush, a country pork terrine with fig jam, and Mr Cannubi mortadella with house ricotta and pistachio. Classics run from a chicken parma topped with burrata to rockling with Hawkes Farm chips and ricotta gnocchi sorrentina, while the grill covers a 500g Gippsland rib eye, swordfish loin with salsa verde and an Otway free-range pork chop with Red Hill apple.
Desserts include a Basque cheesecake with salted caramel and a soft serve affogato. Children have their own menu with a soft serve treat, and vegetarian and gluten-free options are marked throughout. Lunch is served Thursday to Sunday, with dinner on Friday and Saturday.
