The Cheese Rebels was founded in 2018 by Hajo, a cheesemaker with a Masters degree in the craft who has been making cheese since childhood and worked for a range of small and larger dairy companies before starting his own business. The cheese room sits in St Andrews, in the Nillumbik Shire foothills of the Yarra Ranges, an area home to artists, wineries and bakeries as well as the cheesery itself. The range leans into its rebellious name with genuinely unconventional combinations, including a blue cheese infused with chocolate and liquorice, a triple cream brie infused with hay flowers, a vegan Persian-style cheese and a whiskey-infused cheddar, alongside more familiar goat feta and blue vein varieties. Visitors can taste through the range in person at the cheese room, while the website extends the business beyond St Andrews with pre-selected cheese gift boxes and hampers, pairing cheeses with fruit pastes, crackers and local wine, delivered direct to the door. Wholesale supply is also available for retailers, food service businesses, restaurants and delis after bulk quantities. It's a genuinely small, independent operation built entirely around one cheesemaker's passion for pushing cheese somewhere more inventive than the standard supermarket range. Tastings pair unexpected combinations, such as blue cheese with chocolate and lychee, giving visitors a genuinely different introduction to cheese than a standard supermarket tasting board.
