Ocean Eight is a boutique vineyard and winery in Shoreham, built into the hillside by the Aylward family to create a temperature-controlled, gravity-fed winemaking facility. Michael and Hollie Aylward run the winery, with Michael's passion for wine developed through his family's earlier venture at Kooyong, refined further through extensive travel across Burgundy, Alsace and Champagne. The 17-hectare vineyard benefits from ocean breezes and volcanic soils, producing small-batch Pinot Noir, Chardonnay and Pinot Gris known for their lean, bright acidity. The cellar door sits atop the winery's underground barrel room, with a small tasting room for up to six people, plus bench seating on the patio, lawn blankets and a secret garden setting. Guests are welcome to bring their own picnic food. Barrel tastings can be arranged by appointment for a closer look at the winemaking process.
