Palette Restaurant is a fine dining restaurant on the ground level of HOTA Gallery in Surfers Paradise, drawing inspiration from the gallery's major art exhibitions rather than seasonal produce alone. Executive Chef Dayan Hartill-Law leads a menu that includes a five or nine-course tasting experience, a vegetarian tasting menu and a Sunday high tea, paired with a curated wine list. Palette holds two AGFG Chef Hats and offers private dining for celebrations and corporate events.
