Hakata Gensuke's flagship Russell Street restaurant has served the heart of Melbourne's Chinatown since August 2014, when Ramen Master Kousuke Yoshimura first brought his multi-awarded tonkotsu ramen to the city. The signature broth is prepared using the Yobimodoshi master stock method, a technique refined over decades, alongside homemade noodles made in a temperature and humidity-controlled room to ensure consistency. Diners can choose their preferred noodle firmness, along with special toppings, black fungus and bamboo shoots, while the menu also runs to Hakata Hitokuchi Gyoza and chicken karaage. Melbourne's original store has since been joined by branches in Hawthorn, Carlton, Perth and Melbourne's Lonsdale Street, but Russell Street remains the group's Australian flagship. It's a fitting stop for a genuine bowl of Fukuoka-style tonkotsu in the middle of the CBD.
