Mr. Ramen San is a ramen restaurant in the Mid City Centre on Bourke Street, serving Hakata-style tonkotsu ramen made with a broth simmered for over ten hours from pork bones and shiitake mushroom. Owner Roystan Leow developed the recipe after working in Osaka and Kyushu kitchens, and the noodles are made fresh in-house daily. The menu also includes vegetarian and vegan ramen options alongside classic pork bone and spicy miso varieties.
