Hustlers. Syd is reached down a dimly lit flight of stairs off York Street in the Sydney CBD, an intentionally hidden entrance from the team behind Western Sydney staples Saigon Hustle. The intimate, moody interior features twisting bamboo detailing on the ceiling and a king-and-queen playing card mural nodding to Lunar New Year gambling traditions, setting the scene for a pan-Asian menu that celebrates the diversity of Sydney's Asian communities. Dishes pull from across China, Thailand and Japan, including Cantonese prawn toast with trout roe, Wagyu beef tartare with sesame rice crackers and kingfish ceviche cured in a spicy Thai nam jhim, all designed for sharing and conversation. Co-owner Brandon Thoo, whose parents are Thai and Malaysian, describes the food as paying homage to classic dishes while giving each a distinctive twist.
