At the centre of the kitchen sit two Stefano Ferrara pizza ovens, handmade in Naples by builders with more than three generations of craftsmanship behind them. Fontalina commissioned the ovens specifically, reflecting the importance placed on getting the cooking process right. Pizzaioli hand-stretch each dough and top pizzas with a mix of local Mornington Peninsula and Italian produce, cooked in full view of diners. Beyond pizza, the menu draws on genuine Italian dishes rather than pizzeria staples alone, with seasonal specials such as osso buco appearing alongside the regular wood-fired offering. An Italian-leaning wine list rounds out the experience, suited to a slower dinner as much as a quick pizza night.
