Description
FLINT was created by chef and owner Nicki Morrison in 2022, built entirely around the discipline of cooking over fire, with red gum charcoal, smoke and fermentation standing in for a conventional oven. Morrison's career took her through kitchens across Europe, Japan and North America before a stint working with charcoal at Argentinian steakhouse San Telmo sparked the idea for her own restaurant, where she was joined by sous-chef Yukio Endo. Dishes such as bone marrow butter, burnt lettuce, lamb rump and a signature carrot are cooked in full view in the open kitchen, with a private mezzanine dining room overlooking the action for more intimate gatherings. The restaurant won the 2023 Time Out Innovation Award for its distinctive approach to modern Australian cooking. Open Tuesday to Saturday for dinner, FLINT suits a considered special-occasion meal built entirely around the theatre and flavour of fire.
