Gilbees opened on Abbotsford's lower Johnston Street strip from James Habla, who drew on his background in wholesaling and gastro-science to shape a community-centred wine bar celebrating Australian producers and minimal-intervention wines. The seafood-forward menu is built around shared, snacky plates, from octopus carpaccio with lemon dressing to blue swimmer crab spaghettini finished with crunchy breadcrumbs, paired with drops from local labels including Minimum, BK and Bobar Wines. The 1910s Victorian building has been given a considered fit-out with cosy fireside seating, a dog-friendly courtyard for al fresco moments, and rotating artwork from emerging local artists for sale on the walls.
