Babylon Rooftop occupies Level 7 of Westfield Sydney on Pitt Street Mall, its interiors drawing on the Hanging Gardens of Babylon across expansive terraces, open-air bars and dining spaces. The menu takes in modern Levantine cuisine spanning Iraq, Jordan, Lebanon, Israel, Palestine, Syria and Turkey, split across flora, fauna and ocean sections of small share plates, or meze. Many dishes come off a custom-built three-metre mangal and rotisseries, giving much of the food a wood and charcoal-smoked character. The rooftop bar trades Sunday and Monday from midday to ten, Tuesday and Wednesday to eleven, and Thursday to Saturday through to midnight. The restaurant itself runs lunch and dinner within those hours, with dinner service extending later on Thursday to Saturday. Entry is via the express escalators from Pitt Street Mall up to Level 5, then across to Level 7; after ten at night, entry shifts to the lift from Castlereagh Street next to Cerrone.
