Local Brewing Co. was founded in 2019 by university friends Claudia Mitchell, Chris Cefala, Hugo Mylecharane, Sam Harris and Nick Campbell, who bonded over craft beer and a shared interest in social enterprise. After several years operating without a permanent home, the group opened their Clifton Hill taproom on Hilton Street in 2023, built around a 1,500-litre brewhouse and a shipping-container pizza kitchen out front. The brand's social mission runs through the business model: for every four-pack, six-pack and pint sold, Local Brewing Co. donates a meal through their partnership with SecondBite, a food rescue organisation, having contributed more than 200,000 meals to date. The brewery also minimises waste by brewing limited and seasonal beers with surplus ingredients from partners, including a Hazy Nectarine Pale Ale made with rescued nectarines and day-old bakery bread. Ten taps behind the bar pour the brewery's core range alongside taproom-exclusive releases and guest beers from breweries the team admires, served in pots and pints with tasters available before committing to a full glass. The kitchen runs a gourmet pizza menu with contemporary sides, backed by a small wine list and a page of house cocktails for non-beer drinkers. A private upstairs function space caters up to 150 people with no venue hire fee, and the taproom runs weekly specials including trivia nights and schnitzel deals.
