Flinders Sourdough operates from a small bakery tucked behind Cook Street, built around an original Scotch oven dating to 1890 and rebuilt in 1947 when the local bakery moved to its current site. Owners Margaret and Dave spent a year travelling regional Victoria searching for one of the few working Scotch ovens left in the state before finding this one, then another eight months restoring it, opening the bakery in October 2011. Every loaf uses just organic flour, water, a mature sourdough starter and sea salt, naturally fermented without commercial baker's yeast, using traditional hand shaping and cutting techniques rather than machinery. The oven's retained heat, stored in tonnes of brick and sand, gives the bread an even, steady bake that's difficult to replicate outside a genuine wood-fired setup. Beyond the bakery itself, the team sells its sourdough loaves at farmers markets across Melbourne and the Mornington Peninsula each weekend, extending its reach well past the small Flinders shopfront. The bakery has also considered running sourdough workshops, reflecting an interest in sharing wood-fired baking knowledge with home bakers rather than keeping it purely commercial.
