Donovans occupies a former 1920s bathing house on the St Kilda foreshore, bought by Kevin and Gail Donovan in 1995 and transformed two years later into what the couple call their house on the beach. That description shapes the whole experience: a multi-sectioned dining room fitted out with family photos, personal knick-knacks and mismatched chairs, refreshed every six months with a themed makeover, giving the space the feel of a dinner party at a friend's home rather than a formal restaurant. Floor-to-ceiling windows open directly onto the beach, and the private dining room extends onto its own terrace with uninterrupted views of Port Phillip Bay. The kitchen's menu draws on Mediterranean cooking, balancing seafood, meat and vegetarian dishes alongside an expanded range of charcoal-grilled plates, seating up to 120 across the dining room. Donovans has picked up consecutive Good Food Guide chef's hats, with Kevin and Gail still working the floor full-time decades after opening.
