Wilsons Wine Cellar opened in December 2017 a few streets back from Mornington's Main Street, built around a simple ethos: honest food, honest wine, honest staff. Fruit and vegetables are hand-picked daily, sourdough is baked fresh from starter with no preservatives, and the Spanish-inspired tapas menu runs to cured meats, tortilla, cheese boards, chorizo, guacamole and caramelised leek with potato, egg and smoked paprika. Spanning two dining rooms that seat around 70, the fit-out leans into recycled timber, lush velvet and comfortable armchairs, with dark walls lined by more than 80 wines by the glass and bottle, from classic varietals to organic and minimal-intervention labels, including Peninsula names like Kerri Greens, Quealy Wines and Foxeys Hangout. Cocktails get equal attention despite the wine bar name, with drinks like a Bush G&T mixing native gin, lemon myrtle and oregano. Set menus are available for groups of two or more, with dietary requirements catered for. Wilsons caters functions of any size, from standing drinks to a full sit-down wedding, and wine bottles can be taken home as well as enjoyed on site. An indoor fireplace keeps the space warm through the cooler months, and street parking is available directly outside for anyone driving in.
