Clover is a wine bar and bistro on the quieter, eastern stretch of Swan Street in Richmond, opened by chef Charley Snadden-Wilson, previously of The Moon, Etta and Embla, alongside wine specialist Lyndon Kubis. The kitchen leans on produce cooked over fire, with dishes such as Sydney rock oysters, dry-aged pork chop with buttermilk and grilled lettuce, and a signature honey bread, a 24-hour fermented dough baked to order and served with herb de Provence butter. The wine list runs largely through Australian, French and Italian producers, with staff on hand to guide diners through pairings or full flights rather than treating the list as intimidating. Clover seats around 48 guests across an intimate dining room and courtyard, reflective of modern European bistro style, with a focus on good produce, good wine and unhurried evenings.
