Frenchies Bistro & Brewery was established in 2017 by Thomas Cauquil and Vincent de Soyres inside The Cannery, a converted industrial complex in Rosebery that has become one of Sydney's more distinctive food and drink precincts. The split-level venue combines a working microbrewery with a French-inspired bistro upstairs, with Cauquil's kitchen crafting produce-driven dishes in-house, from aged charcuterie to hand-rolled pasta and long-fermented sourdough, drawing on his background in Michelin-starred kitchens in Paris and Madrid. De Soyres, who trained at Lyon's Ninkasi brewery before moving to Australia, crafts award-winning beers, spritzes and cocktails that move beyond traditional categories to complement the food. In 2023, the pair expanded further with a pâtisserie and a second, larger brewery within The Cannery. Full and partial venue hire caters to 10 to 200 guests, making Frenchies suited to both a casual beer and share plate and a larger celebration.
