Cilantro operates as one of Holmesglen Institute's two hospitality training restaurants, located at the rear of Building 4 on the Moorabbin campus and home to the internationally renowned Le Cordon Bleu Institute. Menus are designed and presented by Le Cordon Bleu Diplôme de Cuisine students in the final, Superior stage of their studies, with dishes paying homage to traditional French cuisine and a fully licensed bar offering an extensive beverage list including cellar wines, spirits and cocktails. The restaurant seats up to 50 guests, with capacity for 90 at a standing cocktail function, and regularly hosts special events such as high teas alongside its standard lunch and dinner service. Diners are encouraged to get behind the concept, supporting emerging chefs and front-of-house staff as they build the skills for a career in Melbourne's hospitality industry.
