Freyja occupies two levels of the Gothic 1880s Olderfleet building on Collins Street, bringing a New Nordic approach to Australian dining under Executive Chef Jae Bang, formerly of Norway's two-Michelin-starred Re-naa. The kitchen applies fire, smoke and fermentation to local, seasonal produce, with dishes ranging from Murray cod roasted over open flame to duck with finger lime, and a lunchtime smørrebrød service offering the traditional Danish open sandwich. Advanced Sommelier Clotilde Candusso curates a wine program spanning biodynamic and organic Australian varietals alongside vintage European selections from Burgundy, Rhône and Tuscany. Cathedral-style windows, blue marble tables and slatted timber ceilings give the two-level space a striking, heritage-meets-Scandinavian character, with a more intimate private dining area downstairs.
