Hotel Collingwood occupies a corner site on Smith Street that has traded as a pub since 1860, most recently known as the Robert Burns Hotel before its 2022 renovation and rebrand. A colour palette of fresh white and olive green now runs through the space, paired with native blackbutt timber and exposed brick, while two original fireplaces have been restored to working order and the beer garden transformed into an all-weather space. The menu caters to a broad range of diets, including a notable plant-based cheeseburger with dairy-free cheese, alongside classics like Black Angus sirloin, seasonal fish and traditional pub-style pastas. Upstairs, Bobby's Upstairs offers exclusive function hire with its own cocktail bar for up to 100 guests, while the Bistro and a dedicated Wine Room cater to groups of up to 48 and 30 respectively.
