Glass Brasserie sits on Level 2 of the Hilton Sydney on George Street, overlooking the Queen Victoria Building, and has become a long-standing fixture of the CBD's dining scene. Chef de Cuisine Natalie Murphy leads a seasonal, share-style menu built around honest cooking and trusted local suppliers, served in a light-filled dining room with a floor-to-ceiling wine wall running the length of the restaurant. Head Sommelier Mauro Bortolato curates the list, which spans more than 3,500 bottles across two decades of expertise, making it one of Sydney's most extensive wine collections. A striking chef's table seats eight to ten guests for a closer view of the kitchen, and the restaurant caters to functions from business lunches to elegant dinners. Open for lunch Monday to Friday and dinner seven nights a week, Glass Brasserie remains a polished but approachable choice in the heart of the city.
