Colonel Tan's blends traditional Thai cooking with a cheeky American diner aesthetic, created by chef Karen Batson, also known for Melbourne venues Cookie and the late-night diner at The Toff in Town. The name is a nod to Thai pop star Tan Punturaumporn, after kitchen staff took to calling him the Colonel once he began serving a Five Spice Chicken reminiscent of a certain fried-chicken chain founder. A signature dish here is the Bangkok Bolognaise, a spiced-up take on the Italian classic. Set within the busy live music and nightclub venue Revolver Upstairs on Chapel Street, Colonel Tan's shares the space with art installations, exhibitions and gigs, before the room turns into Revolver's late-night club scene. It's an affordable, casual option for dinner before staying on for the entertainment upstairs.
