Gilson opened in December on the Domain Road strip in South Yarra, from Jamie and Loren McBride, who also founded Melbourne cafes Mammoth, Touchwood and Barry. Positioned opposite the Royal Botanic Gardens Melbourne, the all-day menu draws on Italy's traditional osteria style, running from breakfast dishes like garfish and charred eggplant on toast to an evening menu of grilled octopus, Cone Bay barramundi and roast half-chicken, with two pizzettas from the venue's wood-fired oven. Pink clay floors and warm timber finishes give the space a relaxed, considered feel, complemented by a dynamic cocktail list including the house Garden Party. The dining room seats groups of up to 12 for reservations, with shared set menus available for larger group bookings of eight or more, alongside indoor and outdoor seating that takes in the Gardens views.
